Crustless Protein Pumpkin Pie Recipe 11/9/15

Hey guys, I am going to make this short and sweet, just like the pumpkin pie recipe at the end of this post.  I have currently cut out all cheat meals and alcohol until after my upcoming bikini photo shoot, that takes place the first weekend of December.

I have also been hitting the gym and training with my trainer Scott Samuels at Push DT daily. I have zero wiggle room and have been impeccable with my diet, and making sure to get adequate exercise. I am doing the best I can, and when December 3rd rolls around I will be happy with whatever I look like aesthetically, knowing I did my best.  The rest is all about shining brightly from the inside out and taking some magnificent photographs to share!

I started taking transformation pictures again and will be posting them before the upcoming shoot, just to keep myself in check, and track my progress. Be on the lookout for them, I will notify everyone via Instagram and Facebook when I decide to post the progress pictures.

Now for the recipe you have all been hounding me for!!!!!

First, I must tell you I had to make this recipe twice this week. I really felt like I needed to tweak the recipe a tad, I just cannot stomach the saccharin/sweet taste liquid stevia left on my palate after eating the pie.

I decided to replace the Liquid Stevia with Truvia and Brown Sugar Baking Truvia, and I enjoyed the taste much more!!! You can use whatever sweetener you’d like, but it was a unanimous decision around our house, that the same recipe made with truvia was better!

Ingredients:

  • 15 oz canned pumpkin
  • 12 oz unsweetened almond milk
  • 1 scoop ON GOLD STANDARD 100% Pumpkin Pie Protein ( I USED 2 SCOOPS of ISOPURE ZERO CARB VANILLA WHEY PROTEIN POWDER)
  • 3/4 cup liquid egg whites
  • 2 tsp cinnamon
  • 1 tsp All Spice
  • 1 tsp vanilla extract
  • 2 tbs Brown Sugar Baking truvia/ 1 tbs regular truvia OR ( 40 drops of liquid stevia)

Directions:

  1. Preheat oven t0 350 degrees F.
  2. Mix all ingredients together with a wire wisk
  3. pour mixture into a greased pie pan
  4. Bake for 55 min or until a toothpick comes out clean

That’s IT!!! All you have to do now is let the pie cool, slice it up, and ENJOY! Let me know what you think and until next time…..
