Strawberry Lemonade Fruity Mousse recipe 6/24/15

Hi there everyone, I have been really wanting to get this fruity mousse recipe up for you all ASAP. I was craving sweets again and decided to scour the internet for something that I could make. I ran across this “fruity Mousse” recipe and really thought it was a great idea. However, the original recipe called for crystal light, and I am an anti aspartame gal. I was sort of bummed because I was going to pass on the recipe or try and figure out something else to replace the crystal light.

A few days passed and I had a visit from my dear friend Rhiannon. She happens to be the one who got me back in the gym and booked on my first ever photoshoot 5 years ago. She is in incredible shape and not only does she have a body to die for, she also happens to be a pastry chef! It’s always entertaining to be out with her, and watch people fall all over themselves, while trying to catch a glimpse of the striking creature. Everyone is always wondering what she does to keep up her physique and make assumptions of the God awful foods she must have to eat to maintain all that beauty. So I would ALWAYS get a kick of letting people know, (especially after all the staring and assuming) that she is indeed a PASTRY CHEF! Providing that little tid bit of information would really blow some minds I tell ya, and I always enjoyed watching the peoples expressions after saying it. LOL!

Anyway, besides having a wonderful and much needed visit with Rhiannon, she provided me with some information that I was thrilled about! We began discussing her healthy dessert recipes and how she had been making healthy high protein desserts for a few years now and how lucrative the industry is now becoming… Yada, yada, yada….  She then informed me that Crystal light now came out with a few choices flavored by Truvia, (my sweetener of choice) and I just about had a celebratory heart attack! I was going to be able to make the fruity mousse recipe after all. Needless to say I ran out to the grocery store and found it right away. The store I visited only had the lemon flavor with Truvia so that’s the one I got.  I have to admit I bought all 4 that were available as well, so if you go the the Tennant Safeway, and they are out, you know why….. Sorry…. 😉

I hope you all try and enjoy this very simple and refreshing recipe, I sure did!

Ingredients:

  • 1 8oz pkg. fat free cream cheese, softened
  • 1 tub Truvia sweetened crystal light (I used Lemonade flavor)
  • 1 cup skim milk
  • 1 tub (8oz.) low fat cool whip, Thawed
  • 1 cup of chopped organic strawberries

Directions

1. Beat cream cheese and 2 tsp of the crystal light drink mix in a large bowl with and electric mixer on medium speed until well blended and smooth.

2. Add the chopped strawberries and mix them in with the blender until they are spread throughout it evenly as well ( its alright if they break up).

3. Next, while still mixing with the electric mixer, GRADUALLY add the milk and mix until well blended.

4. Then GENTLY, with a spoon, stir in the thawed cool whip until well blended. Now, pour into individual serving dishes.

5. Refrigerate 3 hours or until firm, and top with slice of fresh organic strawberry.

6. Serve and ENJOY!

Note: You can use any type of fresh fruit you want, or skip the fruit all together for an even lower calorie treat.
