Roasted Cauliflower, it’s whats for dinner, and I’m not complaining! 2/11/15

Hi everyone! Checking in from a nice long day of walking my entire town. Again, Kris left very early this morning, so I only had the option of a walk/jog today with the kiddo’s and my friend. We made the best out of it and ended up walking 11.93 miles, burned 3,364 calories and I’m pooped! Tomorrow I’m going to get up early an hit the gym, I really want to be sure to get as much movement and workouts in this week as I can, just to really drive home that Sunday workout that I’m STILL feeling! My workout summary for the day goes like this:

  • 11.93 miles of walking/jogging
  • 3,364 calories burned

I have a great roasted cauliflower recipe I would love to share with you all, it is so good it will knock your socks off, and SO EASY!

What you will need

  • 1 head of cauliflower
  • 2 tbs. olive oil
  • garlic powder
  • onion powder
  • salt
  • pepper
  • baking sheet

First break all of the cauliflower into bite sized pieces and put them into a large bowl. Then pour the olive oil over them, be sure to get your hands in there and mix it all around getting all of the cauliflower lightly covered with the olive oil.

Next lay the cauliflower on a baking sheet, and sprinkle with all of the seasonings, making sure both sides get all of the seasonings on them. I mixed and coated everything with my hands, I don’t have precise measurements for how much spice I used, but just eye it and get everything covered.

Next put the cauliflower in the oven at 450 degrees, and roast for around 25-35 min. Start checking them at 25 min. I like to get a little char on mine, it makes it very flavorful, so I leave mine in for 30-35 min. some ovens cook differently so be sure to check. This is what they will look like when done, and they are FANTASTIC!

I accompanied my cauliflower with half a hamburger patty topped with American cheese, and fresh avocado slices, red onion, and sliced cherry tomatoes. I hope you try this cauliflower recipe and love it like I do!
