Exercise check in, and Egg Pizza recipe 1/22/15

Well this is my second update of the day, I hope you all liked the Lemonade elixir and found it very easy to make. Hopefully you did some research on your own of all the amazing health benefits drinking lemon water has on the human body, and realize that it may just be a good idea to drink up!

Ahhhh now it’s time to log in my exercise for the day, and I’m going to tell you what, it was NOT easy today! I got 4 hours and 15 min. of sleep last night, but I dragged my buns out of bed at 4:45am, fed beautiful baby Madelynn and put her in bed by her dad and headed out. I arrived at the gym at 5:30 and went straight to the Precor and busted out 35 min burning 435 calories. That was all the time I had because my husband Kris had to leave for work and I had to rush back to take care of our girls, but I did it, I got it in…. WHEW!! The mental satisfaction of getting up, dragging my half asleep, blood shot eyed self to the gym and doing anything at all was a giant feat in itself. Yep, it just reassured me that I can do ANYTHING, it just depends how badly I want it and I want to bring MILFEY back pretty darn badly. Well, since I just had that short time at the gym I decided to go for a long walk with the kiddo’s and my workout partner Chelsea. We managed to go 7.40 miles and now I am POOPED. So besides maybe running around the house doing chores, making dinner, and giving baths to the girls, my intentional workout day is all wrapped up…. and sealed with a kiss!

My workout summary is this:

  • 35 min of precor
  • 7.40 miles of brisk walking

So I did it, I did something, and I hope you did too. The day is far from over so I hope you get some kind of workout in today as well. Now for the recipe I promised Stephanie Gnibus that I would post today, oh the promises I make at 6:30 in the morning! The combination of indigence you can use are endless, last night I did tomato, mushroom, olive’s, onion and cheese. You can use anything you like, the trick is to chop and mince everything you choose very tiny. I am giving you the recipe for the one I made at the beginning of the week and sharing the photographs I took,  I hope you like it!

Egg Pizza

What you will need:

  • 4 eggs and 4 egg whites ( or whatever combination of egg and whites you’d like)
  • 1 tsp garlic powder
  • 1 tsp. onion powder
  • salt
  • pepper
  • only a handful of each of the following ingredients below 
  • chopped spinach
  • minced bell peppers
  • minced mushrooms
  • slivered red onion
  • chopped green onion
  • chopped cilantro
  • Shredded Italian cheese blend
  • Shredded cheddar cheese
  • Non stick spray

Whip your eggs/whites in a bowl and add the onion, and garlic powder, a little salt and pepper. Spray your pan liberally with non stick spray, making sure to get the sides . Heat your frying pan up on Med-high,  and add in the eggs. ( typically you cook eggs on low), but we want to get the bottom of the eggs kind of brown and crispy for this recipe. Pull your eggs back (omelet style) thickening the sides and bottom.

Then when you have a nice solid flat base and the top of the eggs are still gelatinous, sprinkle your finely minced ingredients evenly around the top, saving the cheese to sprinkle on LAST.

Then cover the pan with its top, and let cook for about 5-6 min without moving the eggs or pan. This allows the cheese to melt perfectly without over cooking the eggs.

Then take the cover off  and allow to cook without moving for about 5 more min. You will notice that steam got trapped while cooking with the top on , this helps the eggs to “dry out” in a good way. Lightly shake and shimmy the pan loosening up the egg pizza, the bottom will be a bit crisp and golden brown and that is what you want. Remove from heat, then gently take  your spatula and  UN-attach the egg pizza from around the sides and bottom. Once you do that set the entire thing aside to cool for 5 min. Then slip the egg pizza onto a round plate, or if you used a really big pan and more egg, just slice in the pan.
