Gluten Free Chocolate Chip Peanut Butter Banana Muffins 1/25/16

These are DELICIOUS and so simple!

INGREDIENTS: ( I DOUBLED this recipe and made 12 regular sized muffins, this recipe is for mini muffins) For example instead of 1 banana, I used 2, Instead of 1/2 cup of PB I used 1 full cup. etc…. I would recommend doubling the recipe, but its up to you.

  • 1 banana
  • 1/2 cup peanut butter
  • 1/4 tsp baking soda
  • 2 tsp vanilla extract
  • 1 egg
  • 1.5 tbs of honey
  • pinch of salt
  • 1/2 cup chocolate chips

Pre-Heat oven to 400 degrees

Add all of the ingredients into a large mixing bowl, ( EXCEPT the CHOCOLATE CHIPS) ONLY add half of the amount of chocolate chips to the bowl. The rest of the chocolate chips will be sprinkled on top of each muffin HALF WAY through the baking time.

Mix all ingredients in the bowl with a mixer, making sure everything is thoroughly liquefied, then add 1/2 of the chocolate chips and mix in with a spoon.

Spray muffin pan with Non stick spray, and spoon in your muffin mixture

BAKE ON 400 FOR ABOUT 12 min. or until done!

At 6 min. sprinkle the remaining chocolate chips on top of each muffin, then bake the rest of the way. Check with a toothpick before taking them out of the oven.
